Data Analytic Procedure
The model was tested using a stepwise structural equation model (SEM) based on maximum likelihood estimation with the AMOS 6.0 program (Arbuckle, 2005). A 5-step approach was used. In step 1, the baseline model was used to examine the direct effect of food insecurity on health status. In step 2 (nutritional mediators model) nutritional status was added to the baseline model. This was used was used to examine the change in the effect of food insecurity on health status. In step 3 (parental mediators model) parental mental health problems and quality of parenting were added to the baseline model (minus the nutritional mediators).
